Potato Pizza

Ingredients Needed:
- 2 potatoes
- 1 onion
- 1 carrot
- 1 bell pepper
- 3 eggs
- Salt and black pepper (to taste)
- 1 cup of milk (200 ml)
- 200 g flour
- 1 teaspoon baking powder
- 2 tablespoons olive oil
- A handful of finely chopped parsley
- Grated cheese
- Tomatoes (for garnish)
Instructions:
Preparing the Potatoes:
- Grate the potatoes and soak them in cold water for 20 minutes. This step helps remove excess starch, making the potatoes crispier.
Sautéing the Vegetables:
- Sauté the onion for 2-3 minutes, then add the grated carrot and continue to sauté for another 2-3 minutes.
- Finally, add the finely chopped bell pepper and sauté for an additional 2-3 minutes. Set the vegetables aside and let them cool.
Preparing the Batter:
- In a large bowl, beat the eggs with salt and black pepper.
- Add the milk, sifted flour, and baking powder, mixing well until you get a smooth, lump-free batter.
- Add the olive oil and mix well.
Assembling:
- Squeeze the potatoes well to remove excess water and mix them with the sautéed vegetables and finely chopped parsley.
- Pour this mixture into the egg and flour batter, mixing thoroughly.
Baking:
- Line a large baking tray with parchment paper and lightly grease it.
- Pour the mixture onto the tray, shaping it into a round crust, just like a pizza. Bake in a preheated oven at 180°C (350°F) for 20 minutes.
Finishing:
- Remove the crust from the oven, arrange tomato slices on top, and sprinkle with grated cheese.
- Place the pizza back in the oven for another 15 minutes, until the cheese melts beautifully and turns golden.
